It is not new news that celery is one of the healthiest foods you can eat, and should be a part of any balanced, healthy diet. For some, celery is just a garnish for a plate of hot wings, but a recent study has shown that celery has a benefit you might not know about: the ability to kill cancer cells.

The study showed that a compound found in celery, known as apigenin, killed approximately 86% of cancer cells in the lungs. The compound is also known to decrease risks for breast, pancreatic, and prostate cancers. Researchers in China have shown that by eating one serving of two medium stalks of celery 2 to 3 times in a week may reduce the risk of getting lung cancer by 60%.

So how does celery kill cancer?

There is a process in the human body called Vascular endothelial growth, where specific proteins stimulate the formation of new blood vessels. The downside of this protein is that is also helps the growth of cancerous tumors. Apigenin, however, reduces the possibility of growing a tumor by decreasing the effects of vascular endothelial growth. It is not yet determined whether apigenin acts against cancer on its own or it acts together with the other beneficial celery compounds. Apigenin also prevents the glucose uptake it also reduces the cycle of forming cancer cells in the pancreas.

Aside from the ability to prevent and kill cancer cells, celery is also a great source of fiber and antioxidants, and the good news is that it is easy to add into any diet. It’s easily used in stir fries, salsas, smoothies, or even just simply mixed into a salad.
